White Chocolate Protein Cups

Ingredients
75g oat flour (rolled oats, blitzed into a flour)
1.5 scoops Smooth Vanilla Clean Lean Protein
40g coconut oil, melted
1 tbsp maple syrup
90g white chocolate
2 tbsp boiling water

When you want something sweet to satisfy your cravings and hit your protein intake, these homemade protein cups are the perfect solution.
Method
- To a large bowl, add the oat flour and protein powder, then stir to combine. Add the melted coconut oil and maple syrup and stir again until a thick dough forms.

Press this dough between 6 silicone muffin moulds, making a cup shape. Place in the freezer for 10 minutes.

Meanwhile, break the chocolate into small pieces and add to a bowl with 2 tbsp boiling water, stir to combine. If the chocolate doesn’t melt down fully, place in the microwave for 30 seconds. Stir until the chocolate is melted and smooth.

Spoon the chocolate evenly between the cups. Then place in the fridge until set.
