Coconut & Mango Protein Toast

Ingredients

2 Small slices of sourdough bread

120g coconut yoghurt

20g Smooth Vanilla Clean Lean Protein

1 mango, sliced

10g toasted coconut chips

10g pumpkin seeds

This high-protein snack is packed full of exotic flavours, making it the perfect breakfast (or snack) for summer.

 

Method

 

  1. Toast two slices of sourdough bread. 
  1. Mix together the coconut yoghurt with the vanilla clean lean protein powder to get a thick spread. 
  1. Thinly slice the mango.
  1. Spread the coconut yoghurt mixture evenly onto the two pieces of toast.
  1. Arrange the sliced mango on top.
  1. Top with toasted coconut chips and pumpkin seeds.
